If sunshine were a snack, it would taste like these Pineapple Coconut No-Bake Balls. Bursting with tropical flavor and naturally sweetened, they’re the perfect quick treat for busy days, lunchboxes, or healthy snacking. No baking, no fuss — just mix, roll, and chill.
Ingredients

1½ cups dried pineapple (unsweetened if possible)

¾ cup shredded unsweetened coconut (plus extra for rolling)

1 cup rolled oats

2 Tbsp honey or maple syrup

1 tsp vanilla extract

1 Tbsp coconut oil (optional, for moisture)

Pinch of sea salt

Optional add-ins: 1 Tbsp chia seeds, flaxseed, or protein powder
Instructions
Step 1: Blend the Base

In a food processor, pulse oats and shredded coconut until finely ground.

Add dried pineapple, honey (or maple), vanilla, and salt. Process until sticky and well combined.

If mixture is too dry, add a bit of coconut oil or warm water, 1 tsp at a time, until it sticks together.
Step 2: Form & Chill

Scoop about 1 tablespoon of mixture and roll into a ball.

Roll each ball in extra shredded coconut for coating (optional but pretty).

Place on a lined tray and refrigerate for at least 20 minutes to firm up.
