Ingredients

For the Coconut Panna Cotta

  • 1 (13.5 oz) can full-fat coconut milk

  • 1 cup heavy cream (or use more coconut milk for dairy-free)

  • ⅓ cup granulated sugar

  • 2 tsp unflavored powdered gelatin

  • 3 Tbsp cold water

  • ½ tsp vanilla extract

  • Pinch of salt

For the Pineapple Topping

  • 1½ cups fresh pineapple, diced

  • 2 Tbsp sugar or honey

  • 1 Tbsp lime juice

  • Optional: pinch of cinnamon or splash of rum
