This sweet muffin recipe is simple, adaptable, and yields bakery-style muffins with that perfect tender crumb and golden top.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk (whole or 2%)
  • 1/4 cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 tsp vanilla extract
  • Optional: 1 cup mix-ins (blueberries, chocolate chips, nuts, diced apples, etc.)

Instructions

Step 1: Prep

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.

Step 2: Dry Ingredients

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.

Step 3: Wet Ingredients

  1. In another bowl, whisk together milk, oil, eggs, and vanilla until smooth.

Step 4: Combine & Fold

  1. Add wet ingredients to dry and stir gently just until no dry flour remains. Do not overmix.
  2. Fold in mix-ins of your choice.

Step 5: Fill & Bake
