Turn your leftover mashed potatoes into something irresistible with this Leftover Mashed Potato Cheese Puffs recipe — crispy on the outside, gooey and cheesy on the inside. A perfect snack, side dish or party appetizer!
Ingredients
-
2 cups leftover mashed potatoes (chilled works best)
-
1 cup shredded sharp cheddar cheese
-
¼ cup grated Parmesan cheese
-
2 large eggs
-
2 Tbsp chopped chives (optional)
-
¼ tsp garlic powder
-
Salt & freshly ground black pepper, to taste
-
Cooking spray or melted butter (to grease muffin tin)

Instructions
-
Preheat the oven to 400 °F (200 °C). Grease a 12‑cup standard muffin tin with cooking spray or brush lightly with melted butter.
-
In a large mixing bowl, combine the chilled mashed potatoes, shredded cheddar, grated Parmesan, chopped chives (if using), garlic powder, salt and pepper. Mix until well incorporated.
-
Beat the two eggs in a small bowl, then add them to the potato mixture and stir until fully combined.
-
Scoop the mixture into the prepared muffin cups, filling each about ¾ full. Press the mixture down gently so it’s compact.
-
Bake in the preheated oven for 18‑20 minutes, or until the tops are golden brown and edges are crisp.
-
Remove from oven and let the puffs rest in the tin for 2‑3 minutes, then use a small offset spatula or knife to gently remove them. Serve warm.
