Turn your leftover mashed potatoes into something irresistible with this Leftover Mashed Potato Cheese Puffs recipe — crispy on the outside, gooey and cheesy on the inside. A perfect snack, side dish or party appetizer!

Ingredients

  • 2 cups leftover mashed potatoes (chilled works best)

  • 1 cup shredded sharp cheddar cheese

  • ¼ cup grated Parmesan cheese

  • 2 large eggs

  • 2 Tbsp chopped chives (optional)

  • ¼ tsp garlic powder

  • Salt & freshly ground black pepper, to taste

  • Cooking spray or melted butter (to grease muffin tin)

Instructions

  1. Preheat the oven to 400 °F (200 °C). Grease a 12‑cup standard muffin tin with cooking spray or brush lightly with melted butter.

  2. In a large mixing bowl, combine the chilled mashed potatoes, shredded cheddar, grated Parmesan, chopped chives (if using), garlic powder, salt and pepper. Mix until well incorporated.

  3. Beat the two eggs in a small bowl, then add them to the potato mixture and stir until fully combined.

  4. Scoop the mixture into the prepared muffin cups, filling each about ¾ full. Press the mixture down gently so it’s compact.

  5. Bake in the preheated oven for 18‑20 minutes, or until the tops are golden brown and edges are crisp.

  6. Remove from oven and let the puffs rest in the tin for 2‑3 minutes, then use a small offset spatula or knife to gently remove them. Serve warm.
