  • 4–5 lb (≈ 1.8–2.3 kg) beef brisket (flat or point cut, good marbling)

  • 1½ Tbsp coarse sea salt

  • 1½ Tbsp freshly ground black pepper

  • 1 Tbsp smoked paprika

  • 2 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp cayenne pepper (optional — for heat)

  • 2 Tbsp olive oil

  • 1 large onion, thickly sliced

  • 4 cloves garlic, smashed

  • 1 cup beef broth

  • 2 Tbsp Worcestershire sauce

  • ¼ cup brown sugar

  • Optional: 1 Tbsp liquid smoke or 1 tsp smoked salt (for extra smoky flavour)
